After lunch fiesting!

Happy sunday funday guys!

I hope you all have finished eating lunch because i am in the mood for something sweet and delicious. Who is ready for a slice of pinapple upsided down cake???? Topped with cherries and sprinkled brown sugar! Definitely acceptable for a cheat day :D

Followed the recipe from the Naparima Girls Cook Book which has excellent easy recipes to follow. Give it a try and let me know how it turns out!

Cupcakes completed

Yay! The cupcakes came out great! And taste so yummy! I'm thinking about baking a banana bread tomorrow. What do you guys think??


Home-made Vanilla Cupcakes with a secret inside!

Hi guys! Ok soooo on the menu for desserts today is.... Home-made Vanilla with a secret filling cupcakes! :D I'm so excited because my mother is baking with me so who knows what the secret filling will be. I have placed our traditional family recipe for the home-made cupcakes. I hope you try them too so i can know if you like it :) Will post the before and after pictures in my next upcoming post. Ingredients:
1/2 cup oil
1 3/4 cups flour
1 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 egg
3/4 cups milk
1 tsp vanilla

Directions:
Preheat your oven at 350
 Mix the oil, egg, milk & vanilla first then add your small portions of dry ingredients and end with the flour. Mix until smooth.
Pour batter into cupcake baking cups evenly. If you are adding a centre to the cupcakes, fill the baking cup half way with the batter, add your center ingredient and then pour the rest of the batter on top.
Bake them for 15-20 minutes. These cupcakes will not get brown (vanilla based).

What next?

Ok guys, just wanted to give you an image of the result from my first time Oreo Cake. Unfortunately, the icing didn't come out as i would have liked but it still tasted great. But as a substitute for homemade icing, I always found Betty Crocker's frosting to taste amazing! It never fails me.
So what shall we bake next? I'm considering the cheesecake bites or a banana upside down cake :D Yummy!

Oreo Cake!

Hi all!

So i am baking for the first time an Oreo heart shaped Cake. I looked up the recipe from various people and went with of course the one Betty Crocker stated!

First thing you need to do is make sure you have: a vanilla cake mix & its ingredients which is usually eggs, water and oil, Oreo Cookies (i used the original flavor), amd for the frosting: powdered sugar, butter or margarine and milk. Additionally, if you choose to decorate the cake with frosting, make sure to have your pipping bag and star tip.

So.. you will be preparing the vanilla cake mix as directed on the box. You will need to crush your oreo cookies. I used 3 packs which contained 4 cookies in them. After crushing the cookies, stir them into the cake batter and pour into your baking pan and put that baby in the oven!

Next, prepare your icing. I followed a Vanilla Buttercream frosting which indicated: 3 cups powdered sugar, 1/3 cup butter or margarine (soften), 1 1/2 teaspoons of vanilla & 1-2 tablespoons of milk. Mix the ingredients on a medium speed & add milk generously.

When cake is finished baking, take it out to cool and then frost the cake to your desires. Also, you can garnish the cake with remaining oreo cookies.

Sidenote: if your frosting is too thick, add drops at a time of milk. If it is too thin add a small amount of powdered sugar.
